In light of the holiday and this beautiful weather, I decided to make these charming birds nests to serve at our Easter supper. After a bit of trial and error {note- the coconut cookie version of these are a bit more challenging and mine looked more like lumpy saucers than nests}, the chow mein birds nests turned out great and were a hit! Do you have a favorite spring dessert? Do tell!
Chow Mein Birds Nests
- 2 cups butterscotch or chocolate chips (I used chocolate)
- 1 cup peanut butter
- 2 cups chow mein noodles
- Jelly Beans or M&M's ( I used M&M's)
Cover a baking sheet or pan with waxed or parchment paper. Melt butterscotch chips and peanut butter in the top of a double boiler or in the microwave (heat 1 minute, stir, continue heating in 10 second increments until melted and smooth.) Stir in chow mein noodles.
Put butter on your fingers & shape mixture into individual nests. Place on prepared pan
Refrigerate until firm. Fill with jelly beans and serve.
